I recently started the GAPS diet in attempt to sort out my gut and any other health issues.
But I really to LOVE pancakes, especially in bed on Saturday mornings so I had a hunt around for a recipe and this is my take on what I found…
You need:
1 banana, 2 free range eggs, honey (I used manuka), and peanut butter (the one pictured only has peanuts, peanut oil and salt in it)
Smoosh banana and add the eggs. (You can also add some vanilla extract here if you like or extra honey).
Mix together and then cook on a low element or it will burn. It works much easier if you make smaller pancakes and eat a stack of them (otherwise they can be hard to flip).
I have mine with peanut butter and Manuka honey drizzled on top – so delicious!

This was a little projected I made for Mike and I for our 2 year anniversary because one of the traditional gifts is bone china.
So I bought this cute perfect sized coffee cups, got a vivid and did my little spin on one of the projects that everyone is keen to try (probably because it is so quick and easy).
What you need:
Vivid (I tried first with a sharpie, but they don’t work), A cup (or plate), An idea/sketch of what you want you want to decorate your cup with (ours was our initials that we had at our wedding), And an oven – bake at 180 degrees Celsius and bam! you get some awesome personalised cups!

So Explore : is a new column where I will share some of the new places we have recently explored. Tourists in our own city.
At the beginning of the month for our anniversary we decided to go on a morning trip up to Matakana to explore the markets.
If you haven’t been up there, it is a must! So many cute markets and shops and delicious food and coffee.
